SENSORY EVALUATION OF ROAST CHICKEN MEAT AND SEASONING J.P. Ralph
An evaluation conducted by REGENCY TECHNICAL SERVICES, TAFESA REGENCY CAMPUS, DAYS ROAD, REGENCY PARK SA 5010 for FLAVOUR MAKERS, 91-97 WOODLANDS DRIVE, BRAESIDE VIC 3195 with the assistance of TAMI McADAM, EDIBLE ARTISTRY, 15 ABERDEEN RD, PRAHRAN VIC and JODIE FOSTER, SALES MANAGER, FLAVOUR MAKERS
Summary: Four (4) varieties of roast chicken meat and seasoning (stuffing) were evaluated for their sensory quality by 133 to 141 consumer panellists. The varieties are listed below:

The panellists were asked to (a) identify the variety of chicken that had the best aroma, appearance, juiciness and flavour and (b) identify the variety of seasoning that had the best appearance, texture and flavour. The overall liking that the panellists had for the chicken and seasoning were also recorded on a 4 point ranking scale. The sensory was performed blind (ie. the products were only identified by code).
The age distribution of panellists was approximately fifty one percent (51%) in the age range 15 to 24 and approximately forty nine percent (49%) were in the age range 25 to 64. Thirty two percent (32%) of the panellists were 40 years or older.
Results Chicken Meat: A single variety of roast chicken, Woolworth's Country Style Roast Chicken, was preferred significantly more than the other 3 varieties of chicken. The degree of preference that the panellists had for the aroma, juiciness and flavour of sample. Woolworth's Country Style Roast Chicken was statistically very significant.
Results Seasoning (Stuffing): Woolworth's seasoning was most preferred in each of the three sensory attributes (appearance, texture and flavour). Next preferred was Coles seasoning. Woolworth's and Coles were preferred significantly more so than the other 2 varieties of seasoning.
