  • 2 tbs butter
  • 2-3 cups milk
  • 1/2 sheet puff pastry, defrosted
  • 1 rasher of bacon, chopped into small pieces
  • 2 tbs flour
  • pepper to taste
  • 80g cooked chicken
  • 3-4 tbs mixed vegetables, cooked (broccoli, mushrooms, onion, peas, capsicum etc)
  • fresh thyme
  • Method:

  • In a saucepan, melt butter until bubbling.
  • With a whisk, stir in flour and let cook for a minute or two.
  • Add milk gradually, whisking continually to avoid lumps forming.
  • Pour into ice-cube trays and freeze.
  • Pop out frozen sauce into zip-lock bags and store in the freezer.
  • Stir white sauce through vegetables and chicken, add thyme and pepper.
  • Spoon into 1 cup ramekin, sprinkle with grated cheese, then cover with pastry.
  • Bake at 180 degrees Celcius until bubbling and pastry is golden brown.
