Falafels with spring salad Recipe

420g Woolworths Select Chick Peas1 onion, chopped2 cloves garlic, crushed1/4 cup chopped parsley1 tsp each ground coriander and cuminpinch cayenne pepper1 tsp baking powder3 tbs wholemeal plain flouroil spray1/2 cup natural yoghurt1 tbs chopped mintsalad leaves, tomato, cucumber and sprouts, to serve
Drain and rinse chick peas and dry well. Place into a food processor with onion, garlic, parsley, spices and baking powder. Process until a paste forms. Transfer to a bowl and add enough of the flour until mixture holds together. It is best to mix the flour in using your hands.Preheat oven to 200 degrees celcius. Line a baking tray with baking paper. Shape tbspfuls of mixture into small patties and arrange on tray. Spray well with oil spray and bake for 20-25 mins until golden and dry.Combine yoghurt and mint in a small bowl. Arrange salad on serving plates with falafels and spoon over some of the dressing.
