  • 1 cup Woolworths Select frozen peas
  • 2 eggs, whisked
  • 4 bacon rashers, rind removed, shredded
  • 1 tbs vegetable oil
  • 125g can corn kernels, drained
  • 4 cups cooked long grain rice
  • 200g can peeled prawns
  • 2 tbs Woolworths Select soy sauce
  • 1 red capsicum, deseeded, diced
  • 4 green shallots, thinly sliced
  • Method:

  • Heat a wok over high heat. When hot add oil and swirl to cover base of wok. Add bacon and stir-fry for 2 minutes or until golden. Add capsicum, shallots, peas and corn. Stir-fry for 1 minute.
  • Reduce heat to medium and pour eggs over vegetables. Stir breaking egg up. Cook for 1 minute or until egg is just set. Add rice, prawns and soy sauce to wok and using 2 large spoons toss in wok until well combined and heated through. Spoon into bowls and serve.
