  • 1 tbs olive oil
  • 4 red rascal potatoes, thinly sliced
  • 2 tbs finely chopped dill
  • 1 green capsicum, seeded, finely diced
  • 2 tomatoes, seeded, finely diced
  • 2 tsp Woolworths Select Piri Piri Seasoning
  • 1 tbs lemon juice
  • 4 hoki fillets
  • olive oil cooking spray
  • green salad and lemon wedges, to serve
  • Method:

  • Preheat oven to 200 degrees celcius. Line a large baking tray with baking paper. Combine olive oil, potato slices and dill in a large bowl. Place onto prepared tray, overlapping slightly to make 4 x 14cm squares. Bake for 20-25 mins or until light golden.
  • Combine capsicum, tomato, piri piri seasoning and lemon juice in a bowl. Place a fish fillet onto each square of potato. Spray with olive oil and top with capsicum mixture. Bake for 20-25 mins or until fish is cooked through. Serve with green salad and lemon wedges.
