Preheat oven to 200 degrees celcius. Line a large baking tray with baking paper. Combine olive oil, potato slices and dill in a large bowl. Place onto prepared tray, overlapping slightly to make 4 x 14cm squares. Bake for 20-25 mins or until light golden.
Combine capsicum, tomato, piri piri seasoning and lemon juice in a bowl. Place a fish fillet onto each square of potato. Spray with olive oil and top with capsicum mixture. Bake for 20-25 mins or until fish is cooked through. Serve with green salad and lemon wedges.
