Prawn, Mango and Avocado salad Recipe

  • 1 kg cooked Crystal Bay prawns, peeled and deveined
  • 2 mangoes
  • 2 avocados
  • 1 long red chilli, deseeded and finely chopped (optional)
  • 1/2 cup coriander leaves
  • 1 large lime, juiced
  • butter lettuce, to serve
  • lime wedges, to serve


  • Place prawns in a large bowl. Remove mango cheeks by slicing down each side of the stone. Scoop out flesh with a large spoon and dice. Peel avocado, remove stone and slice. Add mango, avocado, red chilli, coriander leaves and lime juice to bowl with prawns. Season with salt and pepper. Gently toss until well combined. Serve on a bed of lettuce with lime wedges.
