Grate rind of 1 large lime and juice. Combine with 1/2 cup olive oil, 1 chopped green shallot, 1 chopped long red chilli, 1 tbs fish sauce, 2 tsp dried coriander, 2 crushed garlic cloves, 1/2 bunch fresh coriander, finely chopped in a large bowl. Add 1kg Large Green Banana or Australian King Prawns. Toss until well combined. Cover and refrigerate for at least 2 hours or overnight. Preheat a barbecue hot plate over high heat. Grease with 1 tbs olive oil. Add prawns and cook for 5 minutes or until crisp and cooked through. Transfer to a platter. Top with coriander and lime wedges.
