Grilled prawns with coriander mayonnaise Recipe

Place 2 garlic cloves, 1 tsp grated ginger, 1-2 small red chilli, 1 tbs chopped lemongrass, grated rind of 1 lime and 1/4 cup vegetable oil in a food processor and process until finely chopped. Transfer to a glass bowl.Remove heads from 2kgs Large Australian Green Banana prawns and devein. Add to marinade, cover and refrigerate for 1 hour.Meanwhile,stir juice from 1 lime, and 1/4 cup chopped coriander into 1 cup mayonnaise. Thread onto bamboo skewers (see fresh tip). Cook on a preheated barbecue grill over medium-high heat for 5 minutes, turning until cooked through. Serve prawns with coriander mayonnaise.
Pre-soak bamboo skewers in water for 20 minutes. When threading the prawns, cover the skewers right to the end to reduce burning.
