  • 500g fresh salmon portions, skinned and boned, roughly chopped
  • 1/2 cup panko breadcrumbs
  • 1 egg, whisked
  • 1 bunch chives, finely chopped
  • 1/4 cup dill sprigs, finely chopped
  • 3 tsp horseradish cream
  • 1 lemon, rind finely grated, juiced
  • 2 sheets frozen butter puff pastry, partially thawed
  • 1 egg, extra, whisked
  • 1 tbs sesame seeds
  • Woolworths Select Tartare Seafood Sauce
  • lemon wedges, to serve
  • Method:

  • Preheat oven to 200 degrees celsius. Line a tray with paper. Place salmon into a food processor and process until finely chopped. Transfer to a bowl. Add breadcrumbs, egg, chives, dill, horseradish, lemon rind and 1 tbs juice. Season and stir well to combine.
  • Lay 1 pastry sheet on a chopping board. Cut in half. Place 1/4 of salmon mixture in a sausage shape on long side. Roll up. Cut into 5 pieces. Repeat with remaining pastry and salmon mixture. Brush rolls with egg. Sprinkle with sesame seeds and a little sea salt.
  • Bake for 20 to 25 minutes or until golden. Serve with tartare and lemon wedges.
