Preheat oven to 200 degrees celsius. Line a tray with paper. Place salmon into a food processor and process until finely chopped. Transfer to a bowl. Add breadcrumbs, egg, chives, dill, horseradish, lemon rind and 1 tbs juice. Season and stir well to combine.
Lay 1 pastry sheet on a chopping board. Cut in half. Place 1/4 of salmon mixture in a sausage shape on long side. Roll up. Cut into 5 pieces. Repeat with remaining pastry and salmon mixture. Brush rolls with egg. Sprinkle with sesame seeds and a little sea salt.
Bake for 20 to 25 minutes or until golden. Serve with tartare and lemon wedges.
