Calamari and Pink Grapefruit Salad
Ingredients:
- 2 large pink grapefruit, cut into segments
- 2 whole avocado, peeled and cut into chunks
- 2 cups iceberg lettuce leaves, finely shredded
- 3 radish, finely sliced
- 1 cup fresh mint leaves, torn
- 1 Tbsp olive oil
- 150g calamari rings
- 1 bottle (300ml) McCormick Simply Seafood, Seafood Cocktail Sauce
Method:
- Combine the grapefruit, avocado, lettuce, radish and mint in a large salad bowl.
- Heat oil and panfry calamari rings for 2-3 minutes, then toss into the salad.
- Drizzle with seafood cocktail sauce and toss together before serving.
Tip:
Citrus fruit is surrounded by pith which is bitter. To make sure your fruit tastes great, pare it instead of peeling it to make sure all the pith is removed.
