Pineapple & kiwi fruit parfait

Ingredients:

  • 1 cup white sugar
  • ¾ cup water
  • 4 sprigs mint
  • 5 kiwi fruit
  • finely grated rind and juice of 1 lime
  • ½ fresh pineapple
  • 400g vanilla yoghurt
  • ? cup toasted muesli

Method:

  1. Stir sugar and water in a small saucepan over medium heat until sugar has dissolved. Bring to the boil, reduce heat and simmer for 10 minutes until thick and syrupy. Remove from heat and add mint. Set aside for 10 minutes.
  2. Meanwhile, peel and finely chop kiwi fruit, reserving 4 slices. Strain sugar syrup and add to kiwi fruit with lime rind and juice. Refrigerate until needed.
  3. Peel, core and dice the pineapple. Peel and dice the remaining kiwi fruit. Layer pineapple into glasses with kiwi fruit sauce, yoghurt and muesli. Finish with diced kiwi fruit, yoghurt and muesli and garnish with reserved kiwi fruit slices. Serve immediately.
Tip:
Use a reduced fat yogurt to make this recipe healthier!
