Poached chicken breast Chinese style
Ingredients:
- 2 cups chicken stock
- 1 cup salt reduced soy sauce
- ¾ cup brown sugar
- 4 green shallots, thinly sliced
- 2 garlic cloves, bruised
- 3cm piece fresh ginger, sliced
- 2 star anise
- 2 cinnamon sticks
- 4 chicken breast fillets
- 2 bunches asparagus, trimmed
- 2 tsp sesame oil
- 2 tsp toasted sesame seeds
Method:
- Combine chicken stock, soy, brown sugar, green shallots (reserving 2 tbs), garlic, ginger, star anise and cinnamon sticks into a large deep frying pan over a medium heat. Add 2½ cups water, and stir until sugar has dissolved and mixture comes to the boil.
- Reduce heat to low and add chicken breasts. Cook for 10-12 minutes or until chicken is cooked through. Remove chicken to a bowl with a slotted spoon. Cover to keep warm. Slice and serve on asparagus.
- To cook asparagus, bring a frying pan of water to the boil. Add asparagus and cook for 1-2 minutes or until just tender. Drain. Return frying pan to a medium heat and add asparagus. Add sesame oil and sesame seeds. Toss until combined.
