Bintje potatoes

Bintje potatoes have a high moisture content and are low in starch, making them a ‘waxy’ variety. Because of this, they’re not a good variety for mashing. Bintje are oval in shape, with pale yellow flesh. They’re good boiled, fried and in casseroles. Bintje potatoes are available all year round.

Quick ideas with BINTJE POTATOES

  1. For a fresh side dish, cut bintje potatoes into quarters and boil until just tender. Add a little cream to sour cream then stir until smooth and a little runny. Stir through potatoes together with plenty of chopped chives and parsley leaves. Season with pepper and serve with beef or chicken.
  2. For a fresh salad, cook bintje potatoes until just tender. Allow to cool slightly then cut into cubes and toss together with cooked bacon pieces, rocket leaves and roasted cherry tomatoes.
