Look for bright red shiny-skinned cherries. Their stems should be intact and they should feel slightly heavy for their size. Avoid any soft or wrinkled looking cherries. Store cherries in the fridge for 4 to 5 days. Remove from the fridge 30 minutes before serving as their flavour is enhanced when they are at room temperature. Wash cherries with their stalks still on (this prevents water from penetrating the fruit). Serve as they are or remove stalks and stones if using in cooking.
