How to pick
If selecting lettuce heads, choose those that are firm with crisp, bright leaves. For loose leaf lettuce, look for vibrant, smooth and springy leaves.
How to store
Keep lettuce chilled in the crisper drawer of your fridge for up to five days and only wash when ready to eat. Store loose leaf lettuce in an airtight container, padded with paper towel. Dressed lettuce will go soggy after 24 hours.
How to use
Usually used raw in a salad, you can also cook cos lettuce on the barbecue alongside meat and seafood. Fresh lettuce makes a great addition shredded in Mexican dishes, or keep the cups whole and enjoy as san choy bau.

Also known as Coral and Butter, Fancy lettuce is available in green or red varieties and features a head of loose, tightly curled leaves with a slight bitterness.
