Heat wok or fry pan to high heat, add oil and continue to heat until just smoking
Add pork and cook, stirring occasionally, for 3-4 minutes until browned and cooked through. Be careful not to overcrowd the pan, this may need to be done in batches. Remove from pan.
Add stir fry vegetables such as capsicum, carrot and onion to the pan and stir fry for a few minutes
Return pork to the pan with vegetables and add hoisin sauce for a quick mid week dinner
