Simple Banana Bread Skill level: Easy Prep time: 15 min Cook time: 50 min Serves: 12Ingredients:1 ¾ cups self-raising flour¼ cup plain flour½ cup caster sugar1tsp ground cinnamon3 pieces overripe medium bananas. Mashed (600g)2 eggs, lightly whisked1 cup CARNATION Creamy Evaporated Milk½ piece banana sliced lengthways (100g)Method:1. Preheat oven to 180°C/160°C. Grease and line a 11 x 21cm (base measurement) loaf pan with baking paper, allowing it to overhang.2. Sift combined flours, sugar and cinnamon into a large bowl. Stir in mashed bananas in a medium bowl. Add eggs and CARNATION Creamy Evaporated Milk; stir until well combined. Add the banana mixture to the flour mixture and stir until just combined. Spoon mixture into the prepared pan and smooth the surface. Top with banana slice.3. Bake for 45-50 minutes or until a skewer inserted into the centre comes out clean.
