Look for plump brightly coloured nectarines with no splits or wrinkles. They should feel relatively heavy for their size with no blemishes on their skin. Store nectarines at room temperature out of direct sunlight until ripened to the desired degree. Once ripe store in a plastic bag in the crisper section of the fridge for 2 to 3 days. Simply wash nectarines in a bowl of cold water (running water can bruise the fruit) then pat dry and enjoy. Cut into slices for use in cooking or salads.
