Around 1900, clever Doctor Bircher- Benner created his original Swiss muesli recipe by soaking oats and adding lots of juicy fruit. Today, bircher muesli is made by soaking in apple juice and yoghurt, and is rather like a cool and creamy porridge.

The secret to bircher muesli is the soaking- it brings out the creaminess in the oats and plumps up the fruit. The best bircher is soaked overnight, leaving you with nothing to worry about when you wake up. Or, you can quickly soak it for 30 minutes in the morning while you pop in the shower.
