Slow Cooker Chicken, Bacon & Mushroom
Serves 6 | Prep 15 mins | Cooking 3 hours (high), 6 hours (low)
What you need
- oil spray
- 1 kg (skinless) chicken thigh fillets, halved
- 1 large onion, chopped
- 2 (150 g) bacon rashers, chopped
- 375 g mushrooms, sliced
- 1 x 40 g sachet McCormick Slow Cookers Chicken Bacon & Mushroom Recipe Base
- 150 g green beans, halved
- 1/3 cup (80 mL) light thickened cream
- steamed carrots & asparagus
What to do
1. Heat oil in a large pan over high heat. Brown chicken, onion and bacon (you may need to do this in batches) then add to slow cooker.
2. Add mushrooms, recipe base and 1/3 cup (80 ml) water to the slow cooker and stir through. Cover and cook for 3 hours on high or 6 hours on low (Keep covered during cooking. Cooking times may vary between slow cooker models, we used a 5.5 L cooker).
3. Fifteen minutes before serving stir through beans and cream, cover and continue to cook. Serve with steamed carrots and asparagus.

No slow cooker, no problem, place casserole in an oven proof dish, cover and cook at 160°C (140°C fan-forced) for 2-3 hours or until tender.
