COOKING GUIDE
POACH Poach: Place thawed smoked hoki in a saucepan. Add parsley stalks, peppercorns and garlic as desired and cover with milk. Bring to the boil then reduce to simmer for about 5 – 7 minutes. Remove fish gently from liquid and strain. Ensure smoked hoki is cooked all the way through or until piping hot in centre.
OVEN BAKE Preheat oven to 180°C (or 200°C fan forced). Place thawed smoked hoki portions in baking dish and cover with tinfoil. Place baking dish in oven back and bake for approximately 12 – 15 minutes. Ensure smoked hoki is cooked all the way through or until piping hot in the centre.
PAN FRY
Preheat a non-stick fry pan with 5mL of olive oil to a medium heat. Cook thawed smoked hoki portions for 3 – 4 minutes turning occasionally. Ensure smoked hoki is cooked all the way through or until piping hot in the centre.
