Healthy and convenient. I almost always have a packet of these in my fridge (even though they are on the open vegetable shelves at the store). They have a long shelf life and don’t taste at all ‘preserved’. Where once the only beetroot we could buy were either tinned slices or whole raw, this is a wonderful innovation to help with easy meal prep. I find these baby beetroot a good size and a good quantity to use in a single meal, especially to add to a salad dish such as my roasted pumpkin, beetroot, tomato salad with feta (I’m posting the recipe soon). If I could have the perfect cooked baby beetroot I would probably prefer it just slightly less cooked so that the texture has some resistance to the bite, but this is just a personal point.
