Ready in 5 easy cooking steps:
1. Pre-heat fan-forced oven to 190°C (200°C conventional)
2. Pat the duck dry with a paper towel. Season with salt to create a crispy skin (for extra crispy skin; leave the duck uncovered in the fridge for up to two days before cooking).
3. Place the duck breast side up on a rack in a roasting tray
4. Roast for 40 minutes per kg, until the skin is crispy and golden
5. Rest for 20 minutes before portioning.
