  • 1 zucchini (approx 20cm)
  • 1/4 cup bread crumbs
  • 1/4 cup panko crumbs
  • 1 egg, beaten
  • 1/4 cup parmesan
  • 1teaspoons salt
  • 1/2teaspoons garlic powder
  • 1/2teaspoons chilli powder (optional)
  • 1teaspoons all purpose seasoning
  • 5milliliter olive oil spray

Description

Deliciously crispy in the air fryer. If using an oven cook at 200° C for 25 mins turning frequently.
Instruction tip
This is for one zucchini, which is one layer in my air fryer. Adjust recipe as necessary, if you have racks to separate multiple layers or wish to do several batches.

Method

Step 1 of 10

Wash, trim and cut zucchini into chips (batons). No need to peel. 1 zucchini should yield about 12 chips depending on your preferred size. Some are going to be a little odd shaped, this is totally fine.

Step 2 of 10

Salt the zucchini and set aside in a colander or similar for 10-15 minutes.

Step 3 of 10

Whisk the egg in a bowl. In a second bowl combine the two crumbs, parmesan, chilli, garlic and all purpose seasoning.

Step 4 of 10

Dry the zucchini chips with a clean tea towel.

Step 5 of 10

Dip the chips first into the egg then into the crumb mixture. Coat well, lightly pressing in the crumb on each side. Lightly tap to remove excess crumb then set aside on a piece of baking paper (or plate or similar). Repeat for all chips.

Step 6 of 10

Turn on air fryer and set to 200°C for 16 minutes. Mine requires a 2 minute pre-heat. Some other models do not.

Step 7 of 10

Very quickly and very lightly spray the chips with spray oil. Do this whilst they are still on the baking paper (or plate). My air fryer instructions specifically state not to spray canned oil directly into the basket as it can damage the non-stick coating.

Step 8 of 10

Place chips into the air fryer basket in a single layer only. This is very important. These will not crisp properly if they are stacked on top of each other. I find that 12 chips is one perfect layer in my air fryer, with small gaps between each chip for air flow.

Step 9 of 10

Cook for 14 minutes at 200°C. Turn once during cooking around the 7 minute mark. Check the chips around the 12 minute mark. 14 minutes is perfect for my air fryer, however my mum's does these in 12 minutes.

Step 10 of 10

Enjoy with your favourite dipping sauce. In the above picture I have chilli aioli.
