  • 1/2 bunch basil
  • 500grams beef mince
  • 2 cloves garlic, crushed
  • 1/2 cup Woolworths sweet chilli sauce
  • 2 spring onions, finely chopped
  • 8 frozen spring roll wrappers, thawed
  • 400grams green beans
  • 150grams thick dried rice noodles
  • 315grams Thai salad kit
  • 1 long red chilli
  • 5mL extra virgin olive oil cooking spray

Description

Cooked to perfection in the air fryer, these easy beef spring rolls deliver punchy Thai flavours and delightful crunch in every bite.

Prepping tip:
No air-fryer? Place rolls on a baking tray lined with baking paper. Bake in a preheated 200°C/180°C oven for 20 minutes, turning halfway or until golden and cooked through.

Method

Step 1 of 4

Pick leaves from basil. Chop half of the basil leaves. Combine beef, garlic, 2 tbs sweet chilli, half of the onion and chopped basil in a large bowl.

To make a roll, place 1 wrapper on a clean work surface diagonally with point at top. Place 3-4 beans across the middle of wrapper, then top with cup beef mixture. Roll up wrapper, folding in edges to enclose filling, to form a log. Repeat with remaining wrappers, beans and beef mixture to make 8 rolls in total.

Spray rolls with oil. Cook rolls, in batches, in a 5L air fryer at 200°C for 10 minutes or until cooked through and golden-brown.

Step 4 of 4

Place noodles in a heatproof bowl. Cover with boiling water. Stand for 3-5 minutes or until softened. Drain, then refresh under cold water. Place in a bowl with salad kit, sliced chilli and three-quarters of the basil leaves. Toss to combine. Serve rolls with salad mixture, remaining basil leaves and remaining sweet chilli.
