Description

This banoffee jam is a delicious way to use up ripe bananas. You can spread it on toast, drizzle it on pancakes or French toast, or serve it on top of Greek yoghurt.

Storing tip:
To store banana jam, spoon into a sterilised jar and allow to cool before storing in the fridge.

Method

Step 1 of 2

Place bananas in a medium saucepan. Roughly mash with a fork. Add sugar and stir to combine. Place over medium heat. Cook, stirring occasionally, for 5 minutes or until simmering. Add lemon juice, vanilla, cinnamon and 2 tbs water. Continue to simmer, stirring occasionally for 10 minutes or until slightly thickened.

To serve, spread toast with ricotta, then top with banana jam and raspberries.
