- 1 lemon, zest and juice of organic
- 675grams figs, ripe with soft, topped and tailed and cut into quarters skins
- 1 small apple, peeled, cored, and roughly chopped
- 1 vanilla pod, sliced length ways
- 675grams granulated sugar
Description
A rich, densely fruity jam such as this can be served with sweet or savoury food – it’s delicious with some cold ham or cheese. Add two teaspoons of chopped crystallized ginger to the figs as they cook, or add a splash of ginger wine at the end, if you wish.
Method
Step 1 of 3
Put the figs in a preserving pan or a large heavy-based saucepan with the lemon zest and juice, chopped apple, and vanilla pod. Cook on a low heat for about 20 minutes or so, stirring occasionally, until the figs have softened and broken down.

Add the sugar and cook on a low heat, stirring continuously, until the sugar has all dissolved. Then bring to the boil and cook at a rolling boil, stirring occasionally, for about 15-20 minutes or until it reaches the setting point. Skim away any scum as it cooks. Remove the pan from the heat while you test for a set.

Carefully remove the vanilla pod, then ladle into warm sterilized jars, cover with discs of waxed paper, seal, and label. Store in a cool, dark place, and refrigerate after opening.
