- 1 cup rice
- 1teaspoons minced ginger
- 1teaspoons minced garlic
- 1/2 cup frozen peas and corn
- 1 small red capsicum
- 1 large mushroom
- 100grams ham
- 1/4 cup plain flour
- 2 eggs
- 2tablespoons soya sauce
- 2 green onion
- 1tablespoons oil spray (for greasing)

Method
Step 1 of 6
Cook rice as per absorption method.
Once cooked transfer to heatproof bowl to cool.
Step 2 of 6
Grease 12 hole muffin tin. Preheat oven to 200 degrees(fan forced)
Step 3 of 6
Chop up all veggies / ham into small pieces as you would standard fried rice.
Add to bowl with rice.
Step 4 of 6
Mix flour into rice/veggies/ham bowl. Add lightly beaten eggs, minced ginger, minced garlic and soya sauce.
Step 5 of 6
Once well combined add to greased muffin tin and slightly compact
Cook for 30-35 mins (once tops are crispy)
Step 6 of 6
Allow to sit in muffin tin for 10 min before running a knife around the edges to release.
