Ingredients: 415g veggie delights casserole mince in gravy; 425g lentils no added salt, drained and rinsed; 50g no added salt tomato paste (triple concentrated ); 0.5 cup frozen baby peas; 2 tsp mixed herbs (eg herbs de provence or italian blend); 1 pinch black pepper (to taste); 600g leftover sweet potato, mashed (or potato, or 1-2 sweet potatoes, peeled/chopped); 2 tsp yeast (or parmesan - non dairy or dairy, optional)

Description

Gardener's Pie, this one is made with sweet potato, and is quick and easy to assemble.

Can be stored unbaked in the fridge for 3-4 days (cover it first), add 15 minutes to the baking time. Also freezes well. Serve with a side salad or mixed steamed vegetables. Roasted mushrooms can be chopped and added to the mince for extra flavour.
