Melted Snowmen Meatballs

- 500grams chicken mince
- 2 lemons
- 1tablespoons ginger paste (lemongrass and pesto pastes are also nice)
- 1/2 cup rolled oats
- 1packets gravox white parsley sauce (i used a pre bought white peppercorn sauce)
- 1 carrot, grated lengthways and cut into small wedges for the noses
- 1 jar black peppercorns (buttons and eyes)
- 1 red onion
- 1 red capsicum
- 1 tomato
- 1 small sprigs of rosemary (for the wreaths)
- 1 packet toothpicks
Description
I was searching for some yummy Christmas finger food and found some adorable cream cheese snowmen dips so I decided to get a little creative and make meatballs.
Instruction tip
Use ingredients you have on hand to decorate your snowmen. The peppercorns were great - I thought they would be too hot to heat but they had everything precooked and could warm the sauce and the meatballs in the microwave when I was ready to serve them.
Method
Step 1 of 7
Place your mince into a bowl and finely grate the lemon rind into the bowl. I love the lemon flavour in the chicken so like to grate 2 lemons but 1 is ok too. Add the paste, rolled oats, salt, and pepper and mix well. The oats help to bind the mince so you may need a little more - add till mixture is firm enough to roll into balls.

Roll into small smalls - with half the balls being slightly larger than the others - these will form the bodies - the smaller ones the heads.

Decorate and give them some personality - push 3 black peppercorns into the larger ones (buttons) and 2 peppercorns into the smaller balls (eyes). Stick small wedges of carrot into the smaller meatballs (noses). Use what you have on hand for the features - I used red onion for the mouth as I was also making a salad but you could probably use capsicum or tomato to give them a lovely big smile.

Cook the meatballs - I cook mine in the microwave - sitting them on 4 layers of paper towel and cooking on moderate temp setting 4-5 (not high) for about 4 mins. Check and turn them around (inner to outer etc) so they cook evenly - again on a moderate temp- not high - they retain their moisture and cook nicely on a low-moderate heat.

While they are cooking make your sauce. Grate the carrot lengthways for the scarves. You could also use cucumber.

When cooked hold together with a toothpick, and add the final touches - the scarves, the rosemary wreath, and I also poured a little bit of the sauce on to the plate first then sat my snowmen into the puddles - so they looked like they were melting.
