  • 1 small orange sweet potato, cut into 6 rounds
  • 150grams marinated feta, drained, reserving 1 tbs oil
  • 1teaspoons dried chilli flakes
  • 2tablespoons pine nuts, toasted
  • 1 punnet thyme, sprigs picked
  • 4 oranges
  • 75grams fresh pomegranate arils
  • 3 cups pomegranate juice, chilled
  • 3/4 cup vodka
  • 1L Woolworths soda water, chilled

Description

Impress guests with delicious pomegranate vodka spritzes and sweet potato crostini at your next summer party. This flavourful cocktail and canape pairing will be a hit with everyone.

If pomegranate arils aren't available, use crushed raspberries or chopped pitted cherries instead.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray with baking paper. Place potato on tray. Drizzle with reserved oil from feta. Season. Bake for 25 minutes or until tender. Cool slightly.

Step 2 of 3

Top potato with feta. Sprinkle with chilli, pine nuts and half of the thyme. Season with freshly ground black pepper.

Step 3 of 3

Juice 3 oranges, then strain to remove pulp. Cut remaining orange into wedges. Divide orange wedges, pomegranate arils and 1 cup ice cubes among 6 x 1 1/2-cup-capacity (375ml) glasses. Combine orange juice and pomegranate juice in a jug. Pour vodka into glasses. Top with pomegranate mixture and soda water, then add remaining thyme. Serve with sweet potato crostini.
