- 200grams minced pork
- 1/2teaspoons salt
- 1teaspoons soy sauce (optional)
- 1/2teaspoons sugar
- 2tablespoons vegetable oil
- 1/2tablespoons lee kum kee chilli bean sauce

By adding ginger paste and crushed garlic, the flavour will become more complex and intense.
Method
Step 1 of 6
Clean and slice eggplant into thin portions. Soak in mild salt water (enough to cover) for 15-20 minutes. Pat dry with paper towel and set aside.
Step 2 of 6
Marinate minced pork with salt, sugar and soy sauce. Wait for 5-10 minutes.
Step 3 of 6
Heat pan and add 1 tbsp oil. Stir fry minced pork with medium heat until cooked. Place onto a plate and set aside.
Step 4 of 6
Add another tbsp oil into pan at medium heat. Add eggplant, keep stirring until softened.
Step 5 of 6
Put the minced pork back into the pan and stir through with eggplant.
Step 6 of 6
Add chilli bean sauce and stir through. Serve.
