A fresh guide to Australian apples: Frequently asked questions

How to keep apples from browning

To keep sliced apples from browning, you have to block oxygen from reaching the flesh. Some effective methods are:

  • Honey or salt soak: Dissolve 2 tablespoons of honey or ½  teaspoon of salt in 1 cup of water. Soak slices for 5 minutes, then rinse. This should help deactivate browning enzymes.
  • Citric acid: Toss slices in lemon or orange juice. The acid lowers the pH level which helps slow oxidation
  • Rubber band trick: Reassemble a sliced apple into its original shape and secure it with a rubber band to naturally limit air exposure.
  • Pick the right apple: Buy varieties naturally resistant to browning, such as Kanzi®, Bravo®,  Envy™ and Cosmic Crisp®.

What are the best apples for baking?

For the best results in your next apple pie or crumble, look for firm, crisp apples like Granny Smith or Pink Lady that hold their shape when baked and don't turn to mush in the oven. A great baking apple often has a balanced flavour to stand up to sugar and spice added to desserts, but it does depend on what you’re making.
