- 100grams raisins
- 75milliliter dark rum
- 175grams plain white flour
- 2teaspoons baking powder
- 1/2teaspoons baking soda
- 1/2teaspoons salt
- 125grams unsalted butter, melted
- 150grams sugar
- 2 large eggs
- 4 small bananas, mashed (very ripe )
- 60grams walnuts, roughly chopped
- 1teaspoons vanilla extract

Description
This recipe came from my Mum and I've made a few tweaks along the way. Make it on the weekend and share with friends or just eat it yourself!
Instruction tip
Tip: During cooking, cover with foil at the 30 minute mark to prevent the top from becoming too crispy.
Method
Step 1 of 5
Preheat the oven to 170°C. In a bowl, add the flour, baking powder, baking soda and salt and mix until well combined. Set aside.
Step 2 of 5
Add the rum and raisins to a saucepan and bring to the boil. Take off the heat and put the lid on the saucepan. Leave for an hour or so until the raisins have soaked up most of the liquid. Drain any remaining liquid.

Ideally use a stand mixer or hand mixer for step 3 and 4. Combine the melted butter and sugar and beat until well blended. Then beat in the eggs one at a time followed by the mashed bananas.

Add the walnuts, raisins and vanilla extract and mix to combine. Lastly, add the pre prepared flour mixture, about a third at a time and fold into the mixture to combine.
Step 5 of 5
Prepare a loaf tin by lining with greaseproof paper, then pour the mixture into the tin spreading out evenly. Bake in the oven for an hour or so or until a skewer comes out clean.
Leave to cool on a wire rack and then slice. Eat as is or you could serve with cream or yoghurt.
