  • 1/2 red capsicum
  • 1/2 green capsicum
  • 1/2 yellow capsicum
  • 1 can corn kernels
  • 1 mild hungarian chilli
  • 2 spring onions
  • 1 1/2 cups milk
  • 1 cup plain flour
  • salt (to taste)
  • pepper (to taste)

Description

A yummy and quick way to use up a few left over veg & a healthy breakkie (or lunch or dinner)
Instruction tip
These are the ingredients I used because I had them in my fridge, but you could use just about anything in your fridge...zucchini, onion, tomato, bacon, the list goes on. Great to use up veggies.

Method

Step 1 of 4

Diced capsicum & chilli, and slice spring onions. Add to bowl. Open can of corn and add to mix.

Step 2 of 4

Serve with whatever you like - mine was done with bacon, haloumi & topped with a fried egg & fresh rocket with tomato chutney on the side. Made for a super yummy brekkie. Extras can be frozen for easy meals later on

Add flour & milk until you have a batter like consistency- you may need more or less of each depending on your mixture. Add salt & pepper for seasoning.

Step 4 of 4

Heat up pie maker, or frying pan. If you have a pie maker, once hot, add 2 spoon full of batter to each pie hole. Close lid and let cook for 5-10mins or until top starts to set a little. Flip the fritters and cook for another 5 mins. Remove from pie maker and continue until all batter cooked. If using a frying pan, heat a good amount of either olive, canola or vegetable oil. Shallow fry 1-2 spoonfuls of batter per fritter. Flip once it starts to bubble. Watch out, they may stick a little! Once cooked, put on paper towel on plate to drain a little.
