  • 2tablespoons maple syrup

  • 2 1/4teaspoons mixed spice
  • 2 small Pink Lady apples
  • 1/2 cup Greek-style natural yoghurt

Description

Baking a batch of apple-studded treats and topping them with fine apple slices, yoghurt and maple syrup adds up to more than your average muffin.

Check your spice rack. You can replace the mixed spice in this recipe with other spices, such as ground cinnamon or ground allspice.

Method

Step 1 of 5

Preheat oven to 200°C/180°C fan-forced. Grease a 12-hole, -cup-capacity muffin pan. Whisk apple purée, egg, vanilla, oil, milk and 1 tbs maple syrup in a large bowl until combined.

Step 2 of 5

Combine flour, baking powder, oats and 2 tsp spice in a separate bowl. Make a well at the centre.

Step 3 of 5

Core and dice 1 apple. Add milk mixture to flour mixture, then stir until just combined. Fold through diced apple.

Step 4 of 5

Spoon batter equally among prepared pan holes. Bake for 20 minutes or until tops spring back when lightly pressed. Stand in pan for 10 minutes before transferring to a wire rack to cool.

Step 5 of 5

To serve, halve, core and thinly slice remaining apple. Dollop each muffin with a little yoghurt, then top with a few apple slices. Drizzle with remaining maple and sprinkle with remaining spice to serve.
