Make these jacket potatoes ahead of time, without sour cream and parsley. Cook potatoes and then cool. Refrigerate. When you’re ready to eat, reheat potatoes in a preheated 180°C/160°C fan-forced oven for 15-20 minutes or until hot. Serve topped with sour cream and parsley.
