- 1kilograms Woolworths corned beef
- 1 brown onion, roughly chopped
- 2teaspoons whole black peppercorns
- 2tablespoons brown sugar
- 1/2 cup white vinegar
- 8 large white washed potatoes
- 1tablespoons extra virgin olive oil
- 1 cup drained sauerkraut
- 4 Woolworths sweet & spiced gherkins, sliced lengthways
- 1 cup Woolworths light sour cream
- 1/4 bunch continental parsley, leaves picked
Description
The perfect comfort food for a chilly night, these hearty, Irish-inspired jacket potatoes are topped with sliced corned beef, tangy sauerkraut, gherkins, sour cream and parsley.
Instruction tip
Make-ahead tip:Make these jacket potatoes ahead of time, without sour cream and parsley. Cook potatoes and then cool. Refrigerate. When you’re ready to eat, reheat potatoes in a preheated 180°C/160°C fan-forced oven for 15-20 minutes or until hot. Serve topped with sour cream and parsley.
Method
Step 1 of 3
Place beef and onion in the bowl of a 5.5L slow cooker. Add peppercorns, sugar and vinegar. Cover with enough water to just cover beef. Cover with lid and cook on ‘low’ for 8 hours or on ‘high’ for 4 hours until beef is tender. Transfer beef to a chopping board and discard cooking liquid. Slice beef.

When the corned beef has 1 hour cooking time remaining, preheat oven to 200°C/180°C fan-forced. Place potatoes on a baking tray. Drizzle with oil and season with freshly cracked black pepper. Bake for 45 minutes or until golden and tender. Set aside for 5 minutes to cool slightly.

Cut each potato lengthways, being careful not to cut all the way through. Using a clean tea towel, gently open each potato. Fill each potato with sauerkraut, sliced beef, gherkins, sour cream and parsley. Season with freshly cracked black pepper. Serve.
