- 8 green king prawns, peeled, deveined, tail left intact
- 2 rashers middle bacon rashers, trimmed, diced
- 2teaspoons red curry paste
- 2 cloves garlic, crushed
- 2centimeters ginger, finely grated
- 2 cups frozen mixed vegetables
- 2 spring onions, thinly sliced
- 2 cups basmati rice, cooked
- 1tablespoons kecap manis
- 1teaspoons sriracha sauce
- 2 free range eggs, fried
- 2tablespoons fried onions

Method
Step 1 of 4
Heat wok over high heat. Add butter and prawns, then stir-fry for 1 minute or until prawns change colour. Remove prawns from pan and set aside.
Step 2 of 4
Reheat wok and add bacon. Stir-fry for 1 minute or until crispy. Add curry paste, garlic and ginger, then stir-fry for 1 minute or until aromatic.
Step 3 of 4
Add mixed vegetables, spring onion, rice, kecap manis and sriracha. Stir-fry to combine.
Step 4 of 4
Return prawns to wok, then stir-fry until heated through. Divide mixture between bowls, then serve topped with egg and fried onions.
